An Easy Recipe for Collards That Serves 2-4 – 23/06/2011

Some like long, complicated “slow food” recipes for collard greens. We’ve started with a fast and easy one to get you going…

  • 1 bunch collard greens
  • 1 tbsp olive oil
  • 2 tsp minced garlic
  • 1/2 tsp chilli pepper flakes
  • 1/4 tsp salt
  • 1 tbsp red wine vinegar (or balsamic or cider vinegar)
  1. Wash the greens well. Remove stems and center rib. Slice leaves into 1″ strips.
  2. Heat oil in large skillet over medium-high heat and add garlic; cook for about 10-20 seconds until it just barely changes color to light blond.
  3. Add greens. Sprinkle with red pepper and salt. After about 30 seconds, toss to move top to bottom and bottom to top. Continue tossing until greens have wilted slightly and are bright green. Remove from heat and add vinegar.
  4. Serve hot.
